How to Make Potato Boats
  1. Gently wash and pat dry your potatoes. Prick them a few times with a fork.
  2. Arrange the potatoes on a baking sheet and bake at 400°F (200°C) for 45-60 minutes.
  3. Finely dice the ham and red onion. Whisk the eggs in a bowl, then stir in the diced ham, onion, and most of the mozzarella cheese.
  4. Once tender, let the potatoes cool, slice in half lengthwise, and scoop out the insides.
  5. Spoon the filling mixture generously into each potato hollow.
  6. Bake the filled potato boats at 375°F (190°C) for 15-20 minutes until golden brown.
  7. Optional: Garnish with fresh parsley before serving.
